Baked Seafood Rice Casserole 白汁芝士海鮮焗飯

Do you like a warm, hearty and fulfilling meal?  Do you like Seafood, Cheese and Casserole?  Let's try this recipe!  The Baked Seafood Rice Casseroles!  This is one of the classic popular Hong Kong style dishes.  This is one Asian fusion meal that we both love!

Often times we would go to a Hong Kong Style restaurant for this dish.  So, I've decided to learn it with my own twist.  Turns out great!  

  • 4 cups of seafood - your choice.  I got a bad from Costco, added some salmon pieces.  (I would have added some imitation crab meat also :)
  • 4 cups of cooked Rice
  • Sliced Mushroom
  • Chopped Garlic
  • 1/2 stick of butter
  • 5 Tbsp flour
  • 3 cups whole milk
  • Shredded Cheeeeese
  • Asparagus (or green onion)  this is for the fried rice
  • 5 eggs
  • Salt and pepper for taste

Crock Pot BBQ Spare Ribs Recipe

One of Dave's favorite dishes I like to make is the Crock Pot BBQ Spare Ribs.  This is so super easy and this is so super yummy, especially with that Sweet Baby Ray Barbecue Sauce!  I searched for crock pot recipes and found this great one here  (Thank you)!  

First, marinate the ribs in BBQ sauce for about 30 mins.  Overnight even better.  Then, place ribs in the crock pot, put more BBQ sauce until they are covered.  Cook in crock pot on low for 6-8 hours.  Then, it's done!  Fall off the bone good!

Now, if you like to kick up a notch, put the ribs on a baking sheet, brush sauce on it.  Then, broil in oven for 10 mins.  Repeat as desired.  You will love it!

Tiger Shrimps with Sweet and Sour Sauce Recipe 甜酸大蝦

One of the most interest things to be in a inter-racial marriage is the food!  I am blessed with a husband who is quite adventurous in terms of food.  He would at least try anything once (yes, even stinky tofu!  only once for that!)

Some people would ask me, Wini, what do you cook for dinner?  I like to try new things and attempt to be creative (scary!  haha!)  or just follow some recipe.  Since Dave would eat almost anything, I do have the freedom to cook different kind of dishes... though, I do try to maintain a balance of some time Asian style, some time western style.  I love it when he helps setting up table for dinner, he would ask fork or chop sticks?

Remote Control RC Jeep at Crystal Cove California

Another fun day at the beach.  We took our New Bright RC F/F 6.4V Mud Slinger Jeep Wrangler to the beach at Crystal Cove State Park, California.  We bought this toy earlier this year, after Christmas sale, had high hope that it will be fun ride at the beach.  Well, take a look at the video and you see....

It actually works well on flat road.. but come on, this is a Jeep!

All in all, it is still great!  We got to spend a nice afternoon at the beach, laugh and have fun!

Double Decker Bus Ride to Stanley, Hong Kong

One thing even a Hong Kong native like me would still be amazed, is the extraordinary driving skill of people in Hong Kong, especially the double-decker bus drivers!

This time, we took a video of bus route 260, from Exchange Square in Central bus terminal to the Stanley Market.   The tight corners, the narrow roads, and shape turns, it's just amazing.
